3 oz. pisco
3/4 oz. simple syrup (1:1) or 2 tsp. sugar
1 oz. fresh lemon juice
1 fresh egg white (pasteurized if you like)
2 dashes Angostura bitters
Garnish: None
In a shaker, combine the pisco, simple syrup, lemon juice and egg white and shake vigorously with ice. Strain into a glass and dash with bitters.
